“Food sovereignty and nutrition, a right for our children” theme of Stagionello®️’s 7th edition of the International Masterclass for Traditional Salami – Sept. 1-7 in Crotone, Italy.
Post Pandemic break and Alessandro Cuomo’s Team is back with the best international training ever, a mission focused on spreading the vision of healthy and traditional nutrition through the inventors’ Cuomo Method®️.
The entrepreneur behind Stagionello’s applied technology has always felt the need to communicate critical notions about the importance of natural food processing and preservation methods, those linked to local territories and more so, our wise farmers of the rural world.
The Masterclass has been hosting Gastronomic and Culinary Science Schools, Chefs, Butchers and Retail Chains specializing in organic and traditional foods Since 2016, with participants from as many as 5 continents and has managed to structure an additional 15 Stagionello®️ Academies worldwide.
An event that enthusiastically captivated professionals such as Bryan Polcyn, a renowned author and lecturer at the University of Michigan specializing in butchery and charcuterie techniques and who describes the International Masterclass as “the experience that changed my life.”
This passion for ancestral culture today translates into the “reverse revolution” of the Cuomo Method®️ where the genuineness, fragrances, flavours and quality of true Italian artisanal productions are safeguarded so they can be transferred responsibly, through higher education, to future generations.
The Masterclass, organized by the Stagionello®️ Academy and held directly by Alessandro Cuomo, now present in the world in more than 15 locations and which has already trained and equipped 4,000 professionals, engrains those nutraceutical concepts linked to the age-old techniques of preservation, seasoning and curing of typical Italian foods.
An international English-language training course that aims to provide all the theoretical and practical knowledge to begin a specialized career path in “traditional food supply chain manager.”
Cuomo’s exemplary training, significantly merges traditional knowledge with current international food safety regulations and is now supported by several authoritative bodies such as the Department of Microbiology of the University of Bologna, the I.P.S.E.O.A. Tor Carbone Technical Horeca Institute, and local institutions such as the Municipality and Province of Crotone in Calabria Italy.
During the opening conference held on Aug. 29, 2023, doing the honors was inventor Alessandro Cuomo and American author Amy Riolo who came to Crotone as director and V.P. of A.N.I.T.A. (Italian National Academy of Food Traditions) in Washington, D.C. The two will join the trainees along the course of the master’s program, which will begin with the purification of the soul and body with immersion at Vallicupe Falls.
Participants in this edition will include professionals from the United States, South Africa, Czech Rep., Denmark and Ireland, among them will be a faculty member from Metropolitan Community College of Nebraska, U.S.A., C.E.c. Michael Combs.
60 intense hours are scheduled into a week full of itineraries and farming experiences, practical tests and educational classrooms, joined by specialized experts in evocative locations in the Provence of Crotone to integrate with the new paradigm of the Cuomo Method®️: traditional and nutraceutical food must remain a due right for all future generations.
