So we decided to introduce an à la carte menu, featuring higher-quality cuts of meat.” The decision to manage whole loins instead of pre-portioned cuts posed logistical challenges, particularly related to meat preservation. The Bifrò restaurant, closed on Sundays, only offers dinner service during the week, allowing the team to dedicate time to rest, sourcing raw materials, and family. “The restaurant business is demanding,” he added, “but it’s important to find time for yourself and for loved ones.” When he’s not working, Roberto Pintadu spends his time on hobbies and sports. For the past year and a half, he has been practicing boxing, a discipline that helps him stay in shape. Additionally, he follows his children in their passions, such as fishing, which often becomes a family bonding moment: “The support of my family, especially my wife Laura,” he told us, “has always been essential at every stage of my journey.”
