Ozone is a powerful sanitizing agent, but its use in enclosed professional environments requires awareness, strict protocols, and clearly defined responsibilities.
An ozonizer is a device designed to generate ozone (O₃), an allotropic form of oxygen composed of three atoms. This gas is produced through electrical discharges or UV radiation that transform the oxygen present in the air. Ozone is a powerful oxidizing agent with biocidal properties: it is capable of inactivating bacteria, viruses, molds, and yeasts, making it an interesting candidate for sanitizing professional food storage environments.
In the context of environmental sanitation, ozone is often presented as an alternative to traditional chemical agents: chlorine-based detergents, quaternary ammoniums, and other synthetic compounds. Its oxidizing action neutralizes microorganisms and volatile organic compounds responsible for bad odors, without leaving persistent chemical residues. An advantage, at least in appearance.
Ozone is not selective: it can react with numerous substances present in the environment, generating potentially irritating or harmful by-products.
It is precisely this high chemical reactivity that represents, at the same time, the primary risk factor. In the absence of rigorous control of operating parameters, significant side effects can occur, similar to or sometimes greater than those associated with the improper use of traditional disinfectants.

A Powerful, But Not Harmless Gas

Despite the claimed benefits, the use of ozonizers in professional environments such as cold storage rooms for butcher shops, restaurants, or food industries presents risks that are far from negligible. Ozone is classified as an irritating and toxic gas for humans: even exposure at low concentrations can cause irritation to the respiratory tract, eyes, and skin. At higher concentrations, the risk extends to lung damage.
The chemical aggressiveness of ozone does not stop at microorganisms. Over time, this gas can degrade seals, plastics, polystyrene, electronic components, and metal surfaces. In food storage systems, uninformed use can alter the organoleptic characteristics of the food itself, affecting color, smell, and texture — precisely what one would want to preserve.
A further critical aspect concerns operational safety. In enclosed environments such as cold storage rooms, ozone concentration can reach dangerous levels quickly and without obvious warning signs. The gas is odorless at low concentrations, which makes it difficult for operators to perceive the danger. It is therefore essential to equip facilities with dedicated sensors, define precise safety protocols, and ensure controlled access during treatments.

What the Manufacturer Must Guarantee

Before installing or using an ozonizer in a professional storage facility, it is essential to request detailed technical and scientific certification from the manufacturer. This is not mere bureaucracy: it is the prerequisite for operating safely and for protecting one’s legal and operational liability.
Such documentation must precisely indicate the ozone levels generated and the safety limits for enclosed environments, the intended conditions of use including ventilation procedures following treatment, the documented effects on food intended for human consumption and on the materials used in the facility, as well as compliance with applicable regulations. A key element: an explicit declaration attributing responsibility for correct operation and safety to the device manufacturer, and not to the end user.

A Note for Operators and Business Owners

In the absence of the documented guarantees described above, the end user may be exposed to significant health, legal, and operational risks. The ease with which these devices can be purchased — available online even at low prices — should not be misleading: improvised use in professional environments can have serious consequences for both the health of operators and the quality of stored food, as well as for the regulatory compliance of the business.
Innovation, in this sector, only works when accompanied by knowledge, protocols, and shared responsibility.
