Trends In Catering – Matured Meat and Fish Cold Cuts

A course, aimed at public and private sector operators, entitled: “Trends In Catering – Matured Meat and Fish Cured Meats” will be held on March 13. The course will be held in mixed mode, so both in presence inside the Tor Carbone Institute in Rome and remotely, through the Google meet platform.
The event has been organized by the I.P.S.E.O.A. “Tor Carbone – A. Narducci” institute, under the patronage of the Order of Veterinary Doctors of the Province of Latina, the Chamber of Commerce of Rome – Agro Camera, the Italian Association of Veterinary Hygienists, and the Alma Mater Studiorum University of Bologna.

The new Academy in Rome

On March 14, however, the new Stagionello Academy will officially open in Rome. Inside the Tor Carbone Institute, home to the nascent Academy, a double course on meat and fish curing will take place, involving students from the institute and beyond.
The course will focus on the innovative importance of the Cuomo Method and the resulting technology. Maddalena Tessitore and catering experts from “Romolo al Porto” will speak on the occasion.
With practice linked to theory, once again the Stagionello Academy wants to link the secrets of ancient traditional recipes to new production techniques, thanks to the support of state-of-the-art technology.
